The dish included three oyster preparations

Raw: topped with paddlefish caviar, Rockefeller purée, green apple relish, micro greens and cilantro oil

Signature baked: a Southwestern-style oyster with roasted poblano cream, Tex-Mex tomato jam and cotija cheese

Chargrilled: with Tasso and roasted garlic butter, Creole tomato glaze and Romano cheese 2,200 oysters shucked
